Mom’s French Crepes
When I mentioned making crêpes in my last Friday’s post several people mentioned how they enjoyed crêpes so today, I am sharing the recipe my mom gave me. I am not sure whether she found this recipe in France but she probably did since there is where I grew up eating crêpes. Instead of an American breakfast for dinner as I sometimes make me, we would have crêpes for dinner and usually sweet and not savory crêpes. Having crêpes for dinner was a special treat.
I do not make crêpes very often for the simple reason that with a family of 6, we go through a batch pretty quickly. While the recipe is very simple, it does take time to cook them. I think one of the most important tool with crêpes is a good crêpe pan. I ordered this one on Amazon after the one I had from Aldi got too worn to heat them well. You want a thin pan and make sure you heat it well before pouring your batter for the first crêpe. We usually eat crêpes with jam, nutella or fruit and sour cream (would be crème fraiche in France). Of course crêpes are as tasty with just a little sugar sprinkled on top.
Ingredients:
- 1 and 3/4 cups of flour
- 2 cups of milk + 4 tbsp
- 4 eggs
- 1 pinch of salt
- 1/4 cup of melted and cooled butter
Mix all ingredients , adding the milk a little at a time to prevent lumps. Pour a thin layer to cover the bottom of your pan. When the edges start to brown, use a thin spatula to flip. Cook 30 seconds or so.Fold in fourths until you are ready to serve.

Crepes are weekend go-to meal. We all love them and do require a lot of them but I now have two pans going at the same time which really helps. LOL. I might try your recipe, the major difference between the one I use and yours has double the eggs. Have to give it a go.

I make mine in a similar way but I estimate the amount of ingredients and don’t use as many eggs and no butter. I also add a “dash” of mineral water to mine. I throw mine up in the air to flip 🙂 My favorite way to eat them is sprinkled with sugar (sometimes I add a little bit of cinnamon) rolled up. And I also love them with Maintal rosehip fruit spread (available from Amazon or Walmart.com).
But like you I don’t make them often for the family, as it takes a while to make enough for everyone. Thanks for sharing the recipe. I’ll follow this one next time, as guessing the amounts is not always easy to do.

I have a crepe pan and my grandma’s recipe. We always put jelly in them and they are so good. But you’re right, they take a long time to make, so I haven’t made them in ages!!! Now I want to again,
